- 2 pounds baby potatoes
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme

Instructions
- Preheat your oven to 425°F (220°C).
- Wash and halve the baby potatoes.
- In a large bowl, combine olive oil, Parmesan cheese, garlic powder, oregano, thyme, salt, and pepper.
- Add the potatoes to the bowl and toss to coat evenly.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until golden and crispy.
- Serve hot, garnished with fresh herbs if desired.
