Ingredients

- 2 medium zucchinis, sliced
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 425°F (220°C).
- Slice zucchini into thin rounds.
- In one bowl, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each zucchini slice into the eggs, then coat with the breadcrumb mixture.
- Place the coated zucchini slices on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown and crispy.
- Serve hot and enjoy.
Notes
- Adjust seasoning to taste.
- For extra crunch, double coat the zucchini.
- Store leftovers in an airtight container.
