Description

Ingredients

  • 2 medium zucchinis, sliced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Slice zucchini into thin rounds.
  3. In one bowl, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini slice into the eggs, then coat with the breadcrumb mixture.
  6. Place the coated zucchini slices on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes or until golden brown and crispy.
