Description

A simple and hearty dish that combines tender chicken breasts with crispy roasted red potatoes, infused with olive oil and spices, perfect for family dinners.

Ingredients

Scale
  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 1/2 pounds small red potatoes, quartered
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a large baking sheet.
  2. In a mixing bowl, toss the quartered potatoes with olive oil, salt, black pepper, paprika, and garlic powder, then spread them on the baking sheet.
  3. Place the chicken breasts on top of the seasoned potatoes.
  4. Bake for 25 to 30 minutes until the chicken is cooked through and the potatoes are tender.

Notes

Avoid overcrowding the baking sheet for even cooking. Consider marinating the chicken for extra flavor.
