Description

A quick and delicious one-pot meal featuring tender chicken, cheesy tortellini, and a creamy garlic sauce with a spicy kick.


Ingredients

  • 1 lb (450 g) chicken breast, diced
  • 12 oz (340 g) cheese tortellini
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1 teaspoon crushed red pepper flakes
  • 2 cups (480 ml) chicken broth
  • 1 cup (240 ml) heavy cream
  • 2 cups (60 g) fresh spinach, roughly chopped
  • 1/2 cup (50 g) grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Cook the tortellini in a large pot of salted boiling water until they float to the top, then drain and set aside.
  2. Melt 2 tablespoons of butter in a large pot over medium heat, add the diced chicken, season with salt, pepper, and crushed red pepper flakes, and sauté until golden brown.
  3. Remove the chicken from the pot and set aside. In the same pot, melt the remaining 2 tablespoons of butter, add minced garlic, and sauté until fragrant.
  4. Pour in the chicken broth and bring to a gentle simmer, then add the cooked tortellini and stir to combine.
  5. Reduce heat to low, stir in heavy cream, and let simmer until the sauce thickens slightly. Return the chicken and add chopped spinach, cooking until the spinach wilts.
  6. Stir in grated Parmesan cheese, adjust seasoning, and serve garnished with fresh parsley if desired.

Notes

  • For a vegetarian option, substitute chicken with hearty vegetables like mushrooms or zucchini.
  • Adjust the spice level by varying the amount of crushed red pepper flakes.
