- 1 lb (450 g) chicken breast, diced
- 12 oz (340 g) cheese tortellini
- 4 cloves garlic, minced
- 4 tablespoons unsalted butter
- 1 teaspoon crushed red pepper flakes
- 2 cups (480 ml) chicken broth
- 1 cup (240 ml) heavy cream
- 2 cups (60 g) fresh spinach, roughly chopped
- 1/2 cup (50 g) grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish (optional)
Instructions
- Cook the tortellini in a large pot of salted boiling water until they float to the top, then drain and set aside.
- Melt 2 tablespoons of butter in a large pot over medium heat, add the diced chicken, season with salt, pepper, and crushed red pepper flakes, and sauté until golden brown.
- Remove the chicken from the pot and set aside. In the same pot, melt the remaining 2 tablespoons of butter, add minced garlic, and sauté until fragrant.
- Pour in the chicken broth and bring to a gentle simmer, then add the cooked tortellini and stir to combine.
- Reduce heat to low, stir in heavy cream, and let simmer until the sauce thickens slightly. Return the chicken and add chopped spinach, cooking until the spinach wilts.
- Stir in grated Parmesan cheese, adjust seasoning, and serve garnished with fresh parsley if desired.

- For a vegetarian option, substitute chicken with hearty vegetables like mushrooms or zucchini.
- Adjust the spice level by varying the amount of crushed red pepper flakes.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
