Description
A simple one pot meal featuring salmon and rice.
Ingredients

- 2 salmon fillets
- 1 cup rice
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup peas
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Add rice and stir for 2 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Place salmon fillets on top of rice, cover, and cook for another 10 minutes.
- Add peas, stir gently, and cook for 2 more minutes.
- Season with salt and pepper before serving.
Notes
- Use fresh or frozen salmon.
- Substitute chicken broth for a different flavor.
- Add herbs like dill or parsley for extra taste.
