Description

A simple one pot meal featuring salmon and rice.


Ingredients

  • 2 salmon fillets
  • 1 cup rice
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup peas
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add rice and stir for 2 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Place salmon fillets on top of rice, cover, and cook for another 10 minutes.
  7. Add peas, stir gently, and cook for 2 more minutes.
  8. Season with salt and pepper before serving.
