Description

An easy and delightful one-pot meal combining long-grain white rice with mushrooms, onions, and garlic, perfect for busy weeknights.


Ingredients

  • 1 cup long grain white rice
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups cremini or button mushrooms, sliced
  • 2 cups vegetable broth
  • 1 teaspoon soy sauce (optional)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Rinse the long grain white rice under cold water and set aside to drain.
  2. In a skillet, heat olive oil over medium heat and sauté chopped onion for about 3-4 minutes until translucent.
  3. Add minced garlic and cook for an additional minute, then add sliced mushrooms and sauté for 5-6 minutes.
  4. Sprinkle in dried thyme, paprika, salt, and pepper, then stir in the rinsed rice and toast for 1-2 minutes.
  5. Pour in vegetable broth and optional soy sauce, bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes.
  6. After cooking, let the skillet sit covered for an additional 5 minutes, then fluff rice with a fork and garnish with chopped parsley before serving.

Notes

For extra flavor, use high-quality vegetable broth; experiment with adding vegetables or proteins to customize the dish further.
