Ingredients

- 1 lb chicken thighs
- 1 cup rice
- 2 cups chicken broth
- 1 lemon (juiced and zested)
- 2 cloves garlic (minced)
- 1 tsp dried oregano
- 1 tsp dried thyme
- 2 tbsp olive oil
- Salt to taste
- Pepper to taste
- Fresh parsley (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Season the chicken with salt, pepper, oregano, and thyme.
- Add chicken to the pot and brown on both sides.
- Add garlic and sauté for 1 minute.
- Stir in the rice, lemon juice, and lemon zest.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 20-25 minutes or until the rice is cooked.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff rice with a fork and garnish with parsley before serving.
Notes
- Use bone-in chicken for more flavor.
- Adjust lemon juice to taste.
- Substitute brown rice for a healthier option, adjusting cooking time accordingly.
