- 2 tablespoons Butter
- 2–3 cloves Garlic, minced
- 2 cups Stock or Water
- 2 cups Milk
- 1 teaspoon Salt (or to taste)
- 150 grams or 2–3 loose cups of Fresh Spinach
- 1 cup Parmesan cheese, shredded
- 1 cup Shredded Cheddar cheese (or your choice of cheese)
- Black Pepper (to taste)
- 1 teaspoon Chilli Flakes (optional)
- 2 tablespoons Fresh Parsley, chopped
Instructions
- Melt butter in a large pot over low heat and add minced garlic. Cook gently until fragrant.
- Add dry pasta, stock or water, milk, and salt. Stir and bring to a boil.
- Reduce heat and cook until pasta is al dente, about 7–8 minutes, stirring occasionally.
- Add spinach and stir until wilted and fully incorporated.
- Turn off the heat and add Parmesan and Cheddar cheese. Stir until melted and creamy.
- Season with black pepper, chili flakes if using, and garnish with fresh parsley.
- Serve hot with optional garnishes like extra cheese or parsley.
