Ingredients

- 1 large English cucumber, peeled and cut into thirds
- 1 cup mint leaves, loosely packed
- 1 cup fresh lemon juice (juice from about 6 lemons)
- 1 cup water
- 1/2 cup maple syrup or honey
- 3 cups sparkling water
Instructions
- In a blender, combine cucumber, mint leaves, lemon juice, water, and sweetener. Blend until smooth.
- Strain the mixture through a fine mesh strainer into a pitcher.
- Gently stir in the sparkling water.
- Serve immediately over ice, garnished with mint or lemon slices.
Notes
Store leftovers in an airtight container in the refrigerator and consume within 1-2 days. The carbonation may fade over time.
