Description

A refreshing and invigorating drink combining crisp cucumbers, fresh mint, and tangy lemon juice, perfect for hot summer days.


Ingredients

  • 1 large English cucumber, peeled and cut into thirds
  • 1 cup mint leaves, loosely packed
  • 1 cup fresh lemon juice (juice from about 6 lemons)
  • 1 cup water
  • 1/2 cup maple syrup or honey
  • 3 cups sparkling water

Instructions

  1. In a blender, combine cucumber, mint leaves, lemon juice, water, and sweetener. Blend until smooth.
  2. Strain the mixture through a fine mesh strainer into a pitcher.
  3. Gently stir in the sparkling water.
  4. Serve immediately over ice, garnished with mint or lemon slices.

Notes

Store leftovers in an airtight container in the refrigerator and consume within 1-2 days. The carbonation may fade over time.
