These Maple Bacon Pancake Bites are a tasty breakfast treat. You can enjoy them with or without bacon.
Ingredients

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1/4 cup maple syrup
- 1/2 cup cooked bacon, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk milk, egg, melted butter, and maple syrup.
- Combine wet and dry ingredients until just mixed.
- Fold in bacon if using.
- Pour batter into greased mini muffin tins.
- Bake for 12-15 minutes or until golden brown.
- Let cool slightly before serving.
Notes
- You can store leftovers in the fridge for up to 3 days.
- Reheat in the microwave before serving.
- Add chocolate chips for a sweeter version.
