Ingredients

- 2 cups cauliflower rice
- 1 tablespoon olive oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 green onions, chopped
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add mixed vegetables and sauté for 3-4 minutes.
- Add cauliflower rice and cook for another 5 minutes.
- Push the mixture to one side of the pan and pour in beaten eggs.
- Scramble the eggs until fully cooked, then mix with the rice.
- Add soy sauce, garlic powder, salt, and pepper. Stir well.
- Garnish with chopped green onions before serving.
Notes
- Use fresh or frozen cauliflower rice.
- Adjust vegetables based on preference.
- Add protein like chicken or shrimp for extra flavor.
