Ingredients

  • 2 cups cauliflower rice
  • 1 tablespoon olive oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add mixed vegetables and sauté for 3-4 minutes.
  3. Add cauliflower rice and cook for another 5 minutes.
  4. Push the mixture to one side of the pan and pour in beaten eggs.
  5. Scramble the eggs until fully cooked, then mix with the rice.
  6. Add soy sauce, garlic powder, salt, and pepper. Stir well.
  7. Garnish with chopped green onions before serving.
