  • 1 packet taco seasoning (about 1 ounce)
  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • 1/4 cup green onions, sliced
  • 1 avocado, diced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Toss the diced potatoes with olive oil, taco seasoning, salt, and pepper.
  2. Spread the seasoned potatoes in a single layer on a baking sheet and roast for about 25-30 minutes, stirring halfway through.
