- 1 cup sour cream
- 1 cup diced tomatoes
- 1/4 cup green onions, sliced
- 1 avocado, diced

Instructions
- Preheat your oven to 425°F (220°C). Toss the diced potatoes with olive oil, taco seasoning, salt, and pepper.
- Spread the seasoned potatoes in a single layer on a baking sheet and roast for about 25-30 minutes, stirring halfway through.
- While the potatoes are roasting, heat a skillet over medium heat and cook the ground beef until browned, about 5-7 minutes. Drain excess fat and add remaining taco seasoning with a splash of water.
- Assemble the taco bowl by layering roasted potatoes, seasoned ground beef, black beans, corn, and shredded cheese in serving bowls.
- Top with diced tomatoes, avocado, sour cream, and sliced green onions. Customize with additional toppings as desired.
