Delicious loaded potato skins topped with cheese, bacon, and green onions.
Ingredients

- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup sour cream
- 1/4 cup green onions, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Rub the potatoes with olive oil, salt, and pepper.
- Bake the potatoes for about 45 minutes, until tender.
- Allow potatoes to cool slightly, then cut in half and scoop out some flesh.
- Fill each skin with cheese, bacon, and green onions.
- Return to the oven and bake for an additional 10 minutes.
- Serve with sour cream on the side.
Notes
- For extra crispiness, broil for 2-3 minutes after baking.
- Feel free to add jalapeños for spice.
