- 2 cups cooked rice
- 1 pound chicken breast, diced
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1/2 cup sour cream
- 2 tablespoons chipotle sauce
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chicken, bell pepper, and onion. Cook until chicken is done.
- Season with chili powder, cumin, salt, and pepper.
- In a bowl, mix sour cream and chipotle sauce.
- Layer rice, chicken mixture, and drizzle chipotle cream on top.
- Garnish with fresh cilantro.

- Adjust spice level by adding more or less chipotle sauce.
