Description

A delicious and hearty meal featuring chicken, rice, and vegetables topped with a smoky chipotle cream.


Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 2 tablespoons chipotle sauce
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken, bell pepper, and onion. Cook until chicken is done.
  3. Season with chili powder, cumin, salt, and pepper.
  4. In a bowl, mix sour cream and chipotle sauce.
  5. Layer rice, chicken mixture, and drizzle chipotle cream on top.
  6. Garnish with fresh cilantro.
