- 1 bag tortilla chips
- 6 large eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 cup cooked sausage, crumbled
- 1/2 cup diced bell peppers
- 1/2 cup diced onion
- 1/2 cup sliced black olives
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together eggs and milk.
- In a greased casserole dish, layer tortilla chips evenly.
- Top chips with cooked sausage, bell peppers, onions, and black olives.
- Pour egg mixture over the top.
- Sprinkle shredded cheese on top.
- Bake for 30-35 minutes or until eggs are set and cheese is melted.
- Garnish with fresh cilantro before serving.
Notes
- Feel free to add other vegetables or toppings.
- This can be made ahead and stored in the fridge overnight.
- Leftovers can be reheated in the microwave.
