- 4 large russet potatoes, peeled and diced
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot, boil the diced potatoes until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add sour cream, garlic powder, salt, and pepper, and mix well.
- Transfer half of the potato mixture to a greased baking dish.
- Layer half of the cheddar cheese and bacon on top.
- Add the remaining potato mixture and top with the rest of the cheese and bacon.
- Bake for 25-30 minutes until golden and bubbly.
- Garnish with chopped green onions before serving.
Notes
- For extra flavor, add more toppings like jalapeños or chili.
- Can be prepared ahead of time and baked before serving.
