- 4 pieces Salmon fillets (skin on or off as per preference)
- 3 tablespoons Dijon mustard
- 4 cloves garlic (minced)
- Zest of 1 lemon
- Juice of 1 lemon
- 3 tablespoons olive oil (plus additional for spraying)
- Salt (to taste)
- Pepper (to taste)
- 1 bunch asparagus (trimmed)
- 1 cup cherry tomatoes (halved)
- ¼ cup grated Parmesan cheese
Instructions
- In a medium bowl, combine the lemon zest, lemon juice, olive oil, Dijon mustard, and minced garlic to create a flavorful paste.
- Coat the salmon fillets generously with the lemon-garlic paste in a shallow dish. Marinate for about an hour if time allows.
- In a large bowl, toss the trimmed asparagus and halved cherry tomatoes with olive oil, salt, and pepper.
- Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper, arrange the marinated salmon in the center, and spread the vegetables around it. Spray the salmon with olive oil.
- Bake for about 11 minutes or until the salmon flakes easily and reaches an internal temperature of 50°C (120°F).
- Once out of the oven, sprinkle grated Parmesan cheese over the dish and drizzle with more lemon juice before serving.
Notes
Customize with seasonal vegetables or substitute ingredients based on availability. Ensure salmon is not overcooked for best results.
