A light and refreshing lemon asparagus pasta dish.
Ingredients

- 8 oz spaghetti
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook spaghetti according to package instructions.
- In the last 2 minutes of cooking, add asparagus to the pasta water.
- Drain pasta and asparagus, reserving some cooking water.
- In a large skillet, heat olive oil over medium heat.
- Add garlic and sauté until fragrant.
- Add pasta and asparagus to the skillet.
- Stir in lemon juice and zest.
- Add Parmesan cheese, salt, and pepper.
- If needed, add reserved pasta water to achieve desired consistency.
- Garnish with fresh parsley before serving.
Notes
- Use whole wheat spaghetti for a healthier option.
- Adjust lemon juice according to your taste.
- Serve immediately for the best flavor.
