Description

A light and refreshing lemon asparagus pasta dish.


Ingredients

  • 8 oz spaghetti
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook spaghetti according to package instructions.
  2. In the last 2 minutes of cooking, add asparagus to the pasta water.
  3. Drain pasta and asparagus, reserving some cooking water.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add garlic and sauté until fragrant.
  6. Add pasta and asparagus to the skillet.
  7. Stir in lemon juice and zest.
  8. Add Parmesan cheese, salt, and pepper.
  9. If needed, add reserved pasta water to achieve desired consistency.
  10. Garnish with fresh parsley before serving.
