Description

Delightful eggplant roll-ups combining roasted eggplant, flavorful tomato sauce, and gooey mozzarella cheese, perfect as an appetizer or main dish.


Ingredients

  • 1 large eggplant
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (12 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 4 ounces mozzarella cheese, shredded
  • 8 slices of your favorite bread

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplant lengthwise into 1/4 inch thick slices and brush with olive oil, seasoning with salt and pepper.
  3. Roast the eggplant slices on a baking sheet for about 20 minutes until tender and slightly golden.
  4. In a medium pan, sauté onion and garlic in olive oil until softened, then add tomato sauce, oregano, and basil, and simmer for 10 minutes.
  5. Spread the sauce on each roasted eggplant slice, add shredded mozzarella, place bread on top, and roll up.
  6. Place roll-ups seam-side down in a baking dish, spoon remaining sauce on top, and bake for an additional 10 minutes until cheese is melted.

Notes

For a gluten-free option, substitute bread with gluten-free options. For a dairy-free version, use vegan cheese.
