Delightful eggplant roll-ups combining roasted eggplant, flavorful tomato sauce, and gooey mozzarella cheese, perfect as an appetizer or main dish.

- 1 large eggplant
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (12 ounce) can tomato sauce
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 4 ounces mozzarella cheese, shredded
- 8 slices of your favorite bread
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the eggplant lengthwise into 1/4 inch thick slices and brush with olive oil, seasoning with salt and pepper.
- Roast the eggplant slices on a baking sheet for about 20 minutes until tender and slightly golden.
- In a medium pan, sauté onion and garlic in olive oil until softened, then add tomato sauce, oregano, and basil, and simmer for 10 minutes.
- Spread the sauce on each roasted eggplant slice, add shredded mozzarella, place bread on top, and roll up.
- Place roll-ups seam-side down in a baking dish, spoon remaining sauce on top, and bake for an additional 10 minutes until cheese is melted.
Notes
For a gluten-free option, substitute bread with gluten-free options. For a dairy-free version, use vegan cheese.
