Description
A warm potato salad with a honey mustard dressing.
Ingredients

- 2 pounds baby potatoes
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
- Wash and halve the baby potatoes.
- Boil the potatoes in salted water until tender, about 15 minutes.
- In a bowl, whisk together honey, mustard, olive oil, apple cider vinegar, salt, and pepper.
- Drain the potatoes and return them to the pot.
- Add the dressing to the potatoes and stir gently to combine.
- Cook on low heat for 2-3 minutes until heated through.
- Garnish with fresh parsley before serving.
Notes
- Use fresh herbs for added flavor.
- Adjust the honey and mustard to taste.
- Serve warm or at room temperature.
