Description

A warm potato salad with a honey mustard dressing.


Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Wash and halve the baby potatoes.
  2. Boil the potatoes in salted water until tender, about 15 minutes.
  3. In a bowl, whisk together honey, mustard, olive oil, apple cider vinegar, salt, and pepper.
  4. Drain the potatoes and return them to the pot.
  5. Add the dressing to the potatoes and stir gently to combine.
  6. Cook on low heat for 2-3 minutes until heated through.
  7. Garnish with fresh parsley before serving.
