Ingredients

- 2 cups Brussels sprouts, halved
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- Salt and pepper, to taste
- 1/4 cup walnuts, chopped
- 1/4 cup dried cranberries
- 1/4 cup feta cheese, crumbled
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the halved Brussels sprouts with olive oil, honey, Dijon mustard, salt, and pepper.
- Spread the Brussels sprouts on a baking sheet.
- Roast for 20-25 minutes until tender.
- Let the sprouts cool slightly.
- In a large bowl, combine the roasted Brussels sprouts, walnuts, cranberries, and feta cheese.
- Toss gently to combine.
- Serve immediately or chill before serving.
Notes
- You can substitute maple syrup for honey for a vegan option.
- Feel free to add other toppings like avocado or grilled chicken.
