- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, melted
- 1/4 cup honey
- 1 cup buttermilk
- 2 eggs
Instructions
- Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
- In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together melted butter, honey, buttermilk, and eggs.
- Combine wet and dry ingredients, stirring until just mixed.
- Fill muffin tin cups about three-quarters full with batter.
- Bake for 12 to 15 minutes or until golden brown. Check with a toothpick.
- Allow to cool slightly before serving warm or at room temperature.
Notes
For added flavors, serve with butter or drizzle extra honey. Can be enhanced with sweet corn or cheese.
