Description

Delightful bite-sized cornbread poppers with a sweet twist from honey, perfect for snacks or side dishes.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 1/4 cup honey
  • 1 cup buttermilk
  • 2 eggs

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
  2. In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together melted butter, honey, buttermilk, and eggs.
  4. Combine wet and dry ingredients, stirring until just mixed.
  5. Fill muffin tin cups about three-quarters full with batter.
  6. Bake for 12 to 15 minutes or until golden brown. Check with a toothpick.
  7. Allow to cool slightly before serving warm or at room temperature.

Notes

For added flavors, serve with butter or drizzle extra honey. Can be enhanced with sweet corn or cheese.
