Description

A fresh and crunchy salad perfect for holiday gatherings.


Ingredients

Scale
  • 4 cups kale, chopped
  • 1 cup Brussels sprouts, shredded
  • 1 cup red cabbage, shredded
  • 1/2 cup carrots, grated
  • 1/2 cup almonds, sliced
  • 1/2 cup dried cranberries
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Wash and chop the kale and Brussels sprouts.
  2. Shred the red cabbage and grate the carrots.
  3. In a large bowl, combine kale, Brussels sprouts, red cabbage, and carrots.
  4. Add sliced almonds and dried cranberries to the bowl.
  5. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Top with crumbled feta cheese before serving.

Notes

  • Adjust the sweetness by adding more or less honey.
  • You can add grilled chicken for extra protein.
  • This salad can be made a few hours ahead of time.
