Ingredients
- Long-grain rice: 1 cup (about 200 grams)
- Black beans: 1 can (15 oz or about 425 grams), drained and rinsed
- Smoked sausage: 12 oz (about 340 grams), sliced
- Bell peppers: 1 cup, diced (any color)
- Onion: 1 medium, diced
- Garlic: 3 cloves, minced
- Cumin: 1 teaspoon
- Paprika: 1 teaspoon
- Chicken broth: 2 cups (about 480 ml)
- Fresh cilantro: 1/4 cup, chopped (for garnish)
- Olive oil: 1 tablespoon
- Salt and pepper: to taste
Instructions
- Gather your ingredients.
- In a large skillet or pot, heat the olive oil over medium heat and cook the sliced smoked sausage for about 5-7 minutes until browned.
- Remove the sausage and sauté the diced onion and bell peppers in the same skillet for 3-4 minutes, then add minced garlic and cook for an additional minute.
- Sprinkle cumin and paprika over the vegetables, then add the long-grain rice and mix well.
- Pour in the chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes.
- After the rice is tender, fold in the drained black beans and browned sausage, cooking for an additional 2-3 minutes. Season with salt and pepper, and garnish with cilantro before serving.
Notes
- For a vegetarian option, replace the sausage with plant-based sausage or extra vegetables.
- For a spicy twist, use spicy sausage or add jalapeños.
