Description

A delightful dish that combines the rich flavors of smoked sausage, black beans, and vibrant vegetables, creating a meal that is both filling and nutritious.

Ingredients

  • Long-grain rice: 1 cup (about 200 grams)
  • Black beans: 1 can (15 oz or about 425 grams), drained and rinsed
  • Smoked sausage: 12 oz (about 340 grams), sliced
  • Bell peppers: 1 cup, diced (any color)
  • Onion: 1 medium, diced
  • Garlic: 3 cloves, minced
  • Cumin: 1 teaspoon
  • Paprika: 1 teaspoon
  • Chicken broth: 2 cups (about 480 ml)
  • Fresh cilantro: 1/4 cup, chopped (for garnish)
  • Olive oil: 1 tablespoon
  • Salt and pepper: to taste

Instructions

  1. Gather your ingredients.
  2. In a large skillet or pot, heat the olive oil over medium heat and cook the sliced smoked sausage for about 5-7 minutes until browned.
  3. Remove the sausage and sauté the diced onion and bell peppers in the same skillet for 3-4 minutes, then add minced garlic and cook for an additional minute.
  4. Sprinkle cumin and paprika over the vegetables, then add the long-grain rice and mix well.
  5. Pour in the chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes.
  6. After the rice is tender, fold in the drained black beans and browned sausage, cooking for an additional 2-3 minutes. Season with salt and pepper, and garnish with cilantro before serving.

Notes

  • For a vegetarian option, replace the sausage with plant-based sausage or extra vegetables.
  • For a spicy twist, use spicy sausage or add jalapeños.
  • Ensure the sausage is cooked thoroughly for safety.
