A refreshing and nutritious Mediterranean lentil salad.
Ingredients

- 1 cup cooked lentils
- 1 cup chopped cucumbers
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse the cooked lentils under cold water.
- In a large bowl, combine lentils, cucumbers, cherry tomatoes, red onion, parsley, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust the seasoning as preferred.
- Add olives for extra flavor.
- Serve chilled for best taste.
