Description

A refreshing and nutritious Mediterranean lentil salad.


Ingredients

  • 1 cup cooked lentils
  • 1 cup chopped cucumbers
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the cooked lentils under cold water.
  2. In a large bowl, combine lentils, cucumbers, cherry tomatoes, red onion, parsley, and feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
