Ingredients

  • 1 tablespoon extra virgin olive oil
  • 45 small boneless skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh minced garlic
  • 1 small yellow onion, finely diced
  • 24 ounces grape tomatoes, halved
  • 1 cup chicken broth
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon white sugar
  • Parmesan cheese for topping

Instructions

  1. In a small bowl, mix Italian seasoning, garlic powder, salt, and black pepper. Coat chicken breasts with the seasoning mix.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken breasts for about 2 minutes on each side until golden brown.
  3. Remove chicken and lower heat. Sauté garlic and onion for 1-2 minutes until fragrant.
  4. Add grape tomatoes and chicken broth, scraping the skillet to release browned bits. Simmer for 5 minutes.
  5. Stir in basil and sugar, return chicken to the skillet, and simmer for another 5-8 minutes until chicken reaches 165°F (75°C).
  6. Top with fresh basil and Parmesan cheese before serving.

Notes

This dish can be paired with whole grain pasta or served over zucchini noodles for a lighter option.
