Ingredients

- 4 medium-sized potatoes
- 4 tablespoons of olive oil
- 2 teaspoons of salt
- 1 teaspoon of pepper
- 2 tablespoons of fresh rosemary, chopped
- 1 cup of grated cheese (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dry the potatoes.
- Make thin slices across the potatoes, stopping just before cutting through.
- Brush the potatoes with olive oil and sprinkle with salt and pepper.
- Place the potatoes on a baking sheet.
- Bake for 45-50 minutes until crispy and golden.
- If using cheese, add it halfway through baking.
