Ingredients

- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/2 cup chicken broth
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat.
- Add the onion and garlic; sauté until soft.
- Add the ground turkey; cook until browned.
- Stir in the sweet potatoes, bell pepper, cumin, paprika, salt, and pepper.
- Add chicken broth; let it simmer for 10 minutes.
- Transfer the mixture to a baking dish.
- Bake for 25-30 minutes until sweet potatoes are tender.
