Description

Ingredients

  • 6 6-ounce boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup lemon juice plus lemon zest
  • 2 teaspoons oregano
  • 4 cloves garlic, pressed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Parsley or cilantro for serving
  • Lemon wedges for serving

Instructions

  1. Pat the chicken dry with paper towels and pound to an even thickness if necessary.
  2. In a bowl or resealable bag, combine olive oil, lemon juice, lemon zest, oregano, garlic, salt, and pepper. Stir well.
  3. Add chicken to marinade, ensuring it is fully coated. Marinate for at least 30 minutes, preferably up to 2 hours in the refrigerator.
  4. Preheat the grill to medium-high heat. Grill chicken for 5-7 minutes on each side until cooked through (internal temperature of 165°F).
  5. Remove from grill and let rest for a few minutes. Garnish with parsley or cilantro and serve with lemon wedges.

Notes

Marinate chicken longer for better flavor. Avoid overcooking to keep it juicy.
