- 6 6-ounce boneless skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup lemon juice plus lemon zest
- 2 teaspoons oregano
- 4 cloves garlic, pressed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Parsley or cilantro for serving
- Lemon wedges for serving
Instructions
- Pat the chicken dry with paper towels and pound to an even thickness if necessary.
- In a bowl or resealable bag, combine olive oil, lemon juice, lemon zest, oregano, garlic, salt, and pepper. Stir well.
- Add chicken to marinade, ensuring it is fully coated. Marinate for at least 30 minutes, preferably up to 2 hours in the refrigerator.
- Preheat the grill to medium-high heat. Grill chicken for 5-7 minutes on each side until cooked through (internal temperature of 165°F).
- Remove from grill and let rest for a few minutes. Garnish with parsley or cilantro and serve with lemon wedges.
Notes
Marinate chicken longer for better flavor. Avoid overcooking to keep it juicy.
