- 2 pounds boneless skinless chicken breasts or thighs
- 1/4 cup lime juice
- 1/2 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1/2 cup cilantro, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- In a small bowl, whisk together lime juice, honey, soy sauce, olive oil, garlic, cilantro, salt, and pepper.
- Place chicken in a zip-top bag or bowl and pour marinade over it. Seal and refrigerate for at least 3 hours or overnight.
- Preheat grill to medium-high heat. Prepare charcoal or preheat gas grill as needed.
- Remove chicken from marinade and let excess drip off. Place chicken on the grill.
- Grill for 3-4 minutes per side, or until internal temperature reaches 165°F (75°C).
- Remove chicken from grill and let it rest for 5 minutes before slicing or serving.
