Description

Grilled Chicken Zoodle Bowls with Bruschetta combine smoky grilled chicken, fresh bruschetta, and light zucchini noodles for a healthy, flavorful low-carb meal.


Ingredients

  • Chicken Breasts: 2 pieces (about 1 pound)
  • Extra Virgin Olive Oil: 3 tablespoons
  • Balsamic Vinegar: 2 tablespoons
  • Sea Salt: to taste
  • Black Pepper: to taste
  • Garlic Cloves: 3, minced
  • Fresh Basil: ¼ cup, chopped
  • Roma Tomatoes: 3, diced
  • Red Onion: ½ small, finely chopped
  • Grated Parmesan Cheese: ¼ cup (optional for topping)
  • Zucchinis: 2 large, spiralized into noodles

Instructions

  1. Prepare the bruschetta by mixing diced Roma tomatoes, finely chopped red onion, minced garlic, chopped basil, 2 tbsp olive oil, 2 tbsp balsamic vinegar, salt, and pepper; refrigerate.
  2. Marinate chicken in a bag with 2 tbsp olive oil, 2 tbsp balsamic vinegar, salt, pepper, minced garlic, and half the chopped basil; refrigerate for at least 1 hour.
  3. Preheat grill to medium heat; grill chicken breasts 10-12 minutes per side until internal temperature reaches 165°F (75°C). Let rest and slice.
  4. Heat 1 tbsp olive oil in a skillet; sauté spiralized zucchini noodles for 3-5 minutes until tender but still crisp; remove from heat.
  5. Divide zoodles into bowls; top with sliced grilled chicken and spoon bruschetta mixture over; optionally sprinkle with grated Parmesan cheese.
