Description

Ingredients

  • 1 cup farro
  • 2 cups water
  • 1 pound green beans, trimmed
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook farro in water according to package instructions.
  2. Blanch green beans in boiling water for 3-4 minutes.
  3. Drain and transfer green beans to ice water to stop cooking.
  4. In a large bowl, combine cooked farro, green beans, cherry tomatoes, red onion, and feta cheese.
  5. Whisk together olive oil, lemon juice, salt, and pepper in a separate bowl.
  6. Pour dressing over salad and toss to combine.
  7. Chill in the refrigerator for at least 30 minutes before serving.
