Description

A delightful dessert combining creamy Greek yogurt and tangy lemon on a crumbly graham cracker crust.


Ingredients

  • 1 cup graham cracker crumbs
  • 1 tablespoon granulated sugar
  • 3 tablespoons melted unsalted butter
  • 6 ounces brick cream cheese, softened
  • 3/4 cup plain nonfat or low fat Greek yogurt
  • 2 large eggs
  • 1 large egg yolk
  • 1/3 cup granulated sugar
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 300°F (150°C). Line an 8-inch square baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs and 1 tablespoon sugar; add melted butter and mix until resembling wet sand. Press into the pan and bake for about 8 minutes. Let cool.
  3. In a separate bowl, beat cream cheese until smooth, then add Greek yogurt and mix well.
  4. Add eggs one at a time, mixing well after each. Add 1/3 cup sugar, lemon juice, lemon zest, and vanilla extract; beat until smooth.
  5. Pour the filling over the crust and spread evenly. Bake for 34 to 38 minutes until the center is set. Let cool at room temperature, then chill in the refrigerator for 3-4 hours before serving.

Notes

Garnish with lemon zest or powdered sugar. Pair with whipped cream or fresh berries for an added treat.
