Description

Ingredients

  • Cooked chicken breast: 2 cups, diced
  • Greek yogurt: 1 cup (plain, unsweetened)
  • Cucumbers: 1 cup, diced (about 1 medium cucumber)
  • Cherry tomatoes: 1 cup, halved
  • Red bell pepper: 1 medium, diced
  • Red onion: 1/4 cup, finely chopped
  • Fresh parsley: 1/4 cup, chopped (or any herb of your choice)
  • Lemon juice: 2 tablespoons
  • Olive oil: 1 tablespoon
  • Salt: to taste
  • Black pepper: to taste

Instructions

  1. Cook the chicken breast by boiling, grilling, or baking until fully cooked. Allow to cool and dice into bite-sized pieces.
  2. Prepare the vegetables by washing, dicing the cucumber, halving the cherry tomatoes, and chopping the red bell pepper and red onion.
  3. In a large mixing bowl, combine Greek yogurt, lemon juice, olive oil, salt, and black pepper. Stir until smooth.
  4. Add the diced cucumbers, halved cherry tomatoes, diced red bell pepper, and finely chopped red onion to the bowl with the yogurt dressing. Gently fold together.
  5. Add the diced chicken and mix gently until all ingredients are well combined and coated with the dressing.
