- 6 large eggs
- 1 cup milk
- 1 cup crumbled feta cheese
- 1 cup chopped spinach
- 1/2 cup sliced olives
- 1/2 cup diced tomatoes
- 1/4 cup chopped onion
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together eggs and milk.
- Add feta, spinach, olives, tomatoes, onion, oregano, salt, and pepper. Mix well.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes, or until the eggs are set.
- Let cool for a few minutes before slicing and serving.
Notes
- Serve warm for breakfast or brunch.
- Can be made ahead and stored in the refrigerator.
- Add other vegetables like bell peppers for more flavor.
