Ingredients
- Salmon fillet: Four pieces, each about 6 oz.
- Garlic: Four cloves, minced.
- Unsalted butter: 1/2 cup (1 stick).
- Fresh lemon juice: 2 tablespoons.
- Asparagus: One bunch (about 1 lb), trimmed.
- Cherry tomatoes: 1 cup, halved.
- Salt and black pepper: To taste.
- Aluminum foil: For wrapping.
Instructions
- Preheat your oven to 375°F (190°C) or set your grill to medium heat.
- Cut four large pieces of aluminum foil, each about 12 inches long, and lay them flat.
- Place one salmon fillet in the center of each piece of foil and sprinkle with salt and black pepper.
- Drizzle melted garlic butter over each salmon fillet and add minced garlic, asparagus, and cherry tomatoes around the salmon.
- Seal the foil packets by folding the sides over the salmon and vegetables, then folding the ends tightly.
- Place the sealed packets on a baking sheet or directly on the grill grates and cook for about 15-20 minutes in the oven or 10-15 minutes on the grill.
- Carefully open the foil packets, transfer the salmon and vegetables to serving plates, and garnish with fresh parsley and lemon slices if desired.
