Description

A delightful one-pan meal combining crispy bacon, fresh vegetables, and perfectly cooked rice.


Ingredients

  • 6 slices thick cut bacon, chopped
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 4 cups cooked and cooled long-grain rice (preferably day-old)
  • 3 large eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped for garnish

Instructions

  1. Cook the bacon in a cold skillet on medium heat for 5-7 minutes until crispy. Remove and reserve fat.
  2. Sauté diced onion in the reserved bacon fat for 3-5 minutes until translucent. Add minced garlic, peas, and carrots, cooking for another 2-3 minutes.
  3. Add cooked and cooled rice to the skillet, mixing with vegetables; cook for 2-4 minutes.
  4. Push mixture aside, pour beaten eggs on the empty side, cook until set, then scramble and combine.
  5. Increase heat to high, stir in soy sauce, oyster sauce, sesame oil, and crispy bacon. Season with salt and pepper, garnish with green onions, and serve hot.

Notes

Best served as a main dish or side. Great with additional flavors like ginger or vinegar.
