- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin with cooking spray.
- In a mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.
- Add the chopped spinach and feta cheese to the egg mixture.
- Pour the mixture evenly into the muffin tin.
- Bake for 20-25 minutes until the muffins are set and lightly golden.
- Let cool for a few minutes before removing from the tin.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- These muffins can be frozen for longer storage.
- Feel free to add other vegetables or cheeses of your choice.
