- 2 eggs
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 green onion, chopped

Instructions
- Heat vegetable oil in a pan over medium heat.
- Scramble the eggs until fully cooked, then set aside.
- Add mixed vegetables to the pan and stir-fry for 2-3 minutes.
- Add the cooked rice to the pan and mix well.
- Pour soy sauce over the rice and stir to combine.
- Add the scrambled eggs and green onion, mixing everything together.
- Season with salt and pepper to taste.
- Serve hot.

- Use day-old rice for better texture.
- You can add cooked chicken or shrimp for extra protein.
