  • 1 large eggplant, diced

  • 4 cloves garlic, minced
  • 4 ripe tomatoes, chopped
  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add onion and garlic, sauté until fragrant.
  4. Add eggplant, cooking for about 5 minutes.
  5. Stir in zucchinis and bell peppers, cook for another 5 minutes.
