Ingredients

- 2 medium zucchinis, sliced
- 1 large eggplant, diced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 ripe tomatoes, chopped
- 3 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add eggplant, cooking for about 5 minutes.
- Stir in zucchinis and bell peppers, cook for another 5 minutes.
- Add tomatoes, thyme, basil, salt, and pepper. Mix well.
- Transfer the mixture to a baking dish.
- Bake in the oven for 30-35 minutes.
- Enjoy hot or warm.
Notes
- Serve with crusty bread or over rice.
- This dish tastes better the next day.
