Description

An exquisite dessert that combines rich chocolate flavors with Middle Eastern pistachio, creating a delightful harmony of tastes and textures.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1/2 cup hot coffee
  • 2 cups shredded phyllo dough (Kadaif)
  • 2 tablespoons butter
  • 1 cup pistachio cream
  • 4 oz milk or semi-sweet chocolate bar
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add egg, vanilla extract, milk, and vegetable oil; mix until smooth, then stir in hot coffee.
  4. Pour batter into the baking pan and bake for about 25 minutes until a toothpick comes out clean. Cool in the pan for a few minutes before transferring to a wire rack.
  5. In a pan, cook shredded phyllo dough and butter until golden brown (5-7 minutes) then mix in pistachio cream.
  6. For the topping, melt chocolate with heavy cream in the microwave, then whisk until smooth.
  7. Spread the pistachio mixture on the cooled cake and pour the chocolate ganache on top.

Notes

Serve with whipped cream or vanilla ice cream. Pairs well with coffee or mint tea.
