Curry meatballs are flavorful and spicy meatballs cooked in a rich curry sauce.
Ingredients

- 1 pound ground beef
- 1/4 cup breadcrumbs
- 1/4 cup chopped onion
- 1 egg
- 2 tablespoons curry powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 can coconut milk
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon soy sauce
Instructions
- Preheat the oven to 400°F.
- In a bowl, mix ground beef, breadcrumbs, onion, egg, curry powder, salt, and pepper.
- Form the mixture into meatballs.
- Place meatballs on a baking sheet and bake for 20 minutes.
- In a pan, heat oil over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Pour in coconut milk and soy sauce, stir well.
- Add baked meatballs to the sauce and simmer for 10 minutes.
- Serve hot with rice or bread.
Notes
- Adjust the spice level by adding more or less curry powder.
- Use ground chicken or turkey for a lighter option.
- Serve with fresh cilantro for added flavor.
