Description

Creamy Tuscan Chicken is a rich and flavorful dish featuring tender chicken breasts in a garlic-infused parmesan cream sauce with sun-dried tomatoes and spinach. It’s quick, comforting, and perfect for weeknight dinners or special occasions.

  • 4 6-ounce boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • 1/4 cup finely chopped yellow onion
  • 1/2 cup sun-dried tomatoes, thinly sliced
  • 2 cups baby spinach
  • 1 1/2 cups heavy cream
  • 1/4 cup freshly grated parmesan cheese

Instructions

  1. Season both sides of the chicken breasts with Italian seasoning, salt, and black pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Sear the chicken for 3–4 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and sauté the chopped onion for 2–3 minutes until soft and translucent.
  4. Add the minced garlic and sun-dried tomatoes. Cook for about 1 minute until fragrant.
  5. Stir in the baby spinach and cook until wilted, about 1 minute.
  6. Pour in the heavy cream and sprinkle in the parmesan cheese. Stir and let the sauce simmer until slightly thickened.
  7. Return the chicken breasts to the skillet and cook for an additional 5 minutes, ensuring the chicken is cooked through and coated in the sauce.

Notes

  • Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
  • Swap heavy cream with half-and-half or coconut cream for a lighter or dairy-free version.
