- 2 boneless, skinless chicken breasts (about 500 grams)

- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 200 grams fresh spinach
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- 1/2 cup grated Parmesan cheese, plus more for serving
- Fresh basil leaves for garnish
- Optional: 1/2 cup sliced mushrooms, 1/2 cup bell peppers, 1 teaspoon red pepper flakes, 1 tablespoon lemon juice, fresh herbs like thyme or oregano
Instructions
- Prepare the chicken by patting it dry, seasoning with salt and pepper, and cooking in olive oil until golden brown.
- Cook the fettuccine pasta in salted boiling water until al dente, then drain and set aside.
- In the same skillet, sauté minced garlic, then add sun-dried tomatoes and spinach until wilted.
- Pour in heavy cream and chicken broth, add Italian seasoning, and simmer until the sauce thickens.
- Combine the cooked fettuccine with the sauce, adding Parmesan cheese and adjusting the consistency with reserved pasta water if needed.
- Serve the pasta topped with sliced chicken, extra Parmesan, and fresh basil.
