  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts (about 500 grams)
  • Salt and pepper – to taste
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 200 grams fresh spinach
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • Fresh basil leaves for garnish
  • Optional: 1/2 cup sliced mushrooms, 1/2 cup bell peppers, 1 teaspoon red pepper flakes, 1 tablespoon lemon juice, fresh herbs like thyme or oregano

Instructions

  1. Prepare the chicken by patting it dry, seasoning with salt and pepper, and cooking in olive oil until golden brown.
  2. Cook the fettuccine pasta in salted boiling water until al dente, then drain and set aside.
  3. In the same skillet, sauté minced garlic, then add sun-dried tomatoes and spinach until wilted.
  4. Pour in heavy cream and chicken broth, add Italian seasoning, and simmer until the sauce thickens.
  5. Combine the cooked fettuccine with the sauce, adding Parmesan cheese and adjusting the consistency with reserved pasta water if needed.
  6. Serve the pasta topped with sliced chicken, extra Parmesan, and fresh basil.
