Description

A comforting and delicious pasta dish featuring creamy ricotta cheese and juicy cherry tomatoes, finished with fresh basil and Parmesan.


Ingredients

  • 8 oz pasta (penne or spaghetti)
  • 2 cups cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 cup ricotta cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente (8-10 minutes). Reserve ½ cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add halved cherry tomatoes and sauté for about 5 minutes until softened.
  3. Add minced garlic and dried oregano, cooking for an additional 2 minutes.
  4. Reduce heat and add ricotta cheese to the skillet, stirring until well mixed. Adjust the consistency with reserved pasta water as needed.
  5. Toss in the cooked pasta, seasoning with salt and pepper to taste. Serve garnished with fresh basil and Parmesan cheese.

Notes

Best served warm immediately after preparation. Pairs well with green salad and garlic bread.
