Ingredients
- Fresh tomatoes: 2 lbs (about 900 grams), chopped
- Onion: 1 medium, diced
- Garlic: 3 cloves, minced
- Vegetable broth: 4 cups (about 1 liter)
- Heavy cream: 1 cup (240 ml)
- Fresh basil leaves: 1 cup, packed
- Olive oil: 2 tablespoons
- Salt: to taste
- Black pepper: to taste
- Sugar: 1 teaspoon (optional)
- Crusty bread: for serving
Instructions
- Gather all your ingredients.
- In a large pot, heat the olive oil over medium heat and sauté the diced onion until translucent.
- Add the minced garlic and cook for an additional 1-2 minutes.
- Stir in the chopped tomatoes and cook for about 10-15 minutes.
- Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for about 20 minutes.
- Blend the soup until smooth using an immersion blender.
- Return the blended soup to low heat, stir in the heavy cream and fresh basil leaves, and simmer for an additional 5 minutes.
- Adjust seasoning with salt and black pepper to taste, then serve with crusty bread.
