Description

A comforting dish combining rich salmon with fresh spinach in a creamy yogurt-based sauce, perfect for family dinners or impressing guests.


Ingredients

  • 2 salmon fillets
  • 12 oz pasta (rigatoni or penne recommended)
  • 4 cups fresh spinach
  • 1 cup plain Greek yogurt (full fat preferred)
  • 1 fresh lemon (juiced)
  • 2 tablespoons fresh dill (chopped)
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil, add pasta, and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
  2. Pat salmon fillets dry, season with salt and pepper, and cook in heated olive oil in a skillet over medium-high heat for about 4 minutes per side. Remove from heat and set aside.
  3. Return drained pasta to the pot over low heat, add Greek yogurt, and stir until melted. Gradually add reserved pasta water to achieve desired consistency. Fold in spinach until wilted, about 2 minutes, then add lemon juice and dill.
  4. Flake the salmon into bite-sized pieces and mix gently with the pasta. Adjust seasoning as needed and serve immediately.

Notes

For additional flavor, consider adding minced garlic or cherry tomatoes. Pair with a fresh garden salad or crusty bread.
