Description

A delightful dish combining creamy sauces, tender chicken, and pillowy gnocchi, perfect for family dinners or casual gatherings.


Ingredients

  • 3 medium carrots, sliced into half moons
  • 3 celery ribs, diced
  • 10 ounces cremini mushrooms, quartered
  • 1 medium yellow onion, finely chopped
  • 4 garlic cloves, minced
  • 1 teaspoon fresh thyme leaves
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup all-purpose flour or gluten-free flour blend
  • 3 cups chicken stock (homemade preferred)
  • 1 cup whole milk or half and half
  • 1 tablespoon Dijon mustard
  • 1 1/2 teaspoons Italian seasoning
  • 1/4 teaspoon nutmeg (optional)
  • 16 ounces fresh potato gnocchi
  • 2 1/2 cups cooked chicken, torn into bite-sized pieces
  • 1 cup sweet peas (fresh or frozen)
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan for serving (optional)

Instructions

  1. Melt the butter in a large deep skillet over medium heat. Add the sliced carrots, diced celery, and finely chopped onion with a pinch of salt and cook for about 6-8 minutes until softened.
  2. Add the quartered mushrooms and minced garlic to the skillet and cook for about 5 minutes until the mushrooms release moisture.
  3. Sprinkle the flour into the skillet, stirring well to coat all the vegetables, and cook for about 2 minutes.
  4. Gradually whisk in the chicken stock and milk, then add the Dijon mustard, Italian seasoning, and nutmeg (if using). Bring to a simmer, then add the gnocchi and cook for about 4-5 minutes.
  5. Stir in the cooked chicken and sweet peas and simmer until everything is heated through, about 3-4 minutes.
  6. Fold in the fresh parsley and thyme leaves, adjust seasoning with salt and pepper, and let rest for 5 minutes before serving.
  7. Serve warm, ladle the gnocchi and sauce into bowls, optionally topped with grated Parmesan.
