- 2 tablespoons olive oil
- 500 grams (1 lb) boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 240 ml (1 cup) heavy cream
- 60 grams (1/2 cup) grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
- Additional grated cheese (for serving)
Instructions
- Prepare the chicken by cutting it into bite-sized pieces and seasoning with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
- Cook the fettuccine pasta in salted boiling water until al dente, then drain and reserve some pasta water.
- In a skillet, heat olive oil and cook the seasoned chicken until golden brown, then set aside.
- Sauté bell peppers, onion, and garlic in the same skillet until tender, then add heavy cream and Parmesan cheese to create the sauce.
- Combine the cooked chicken and fettuccine with the sauce, tossing to coat evenly.
- Serve warm, garnished with fresh parsley and additional cheese if desired.
