- 1 pound beef sirloin, sliced into strips
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 8 ounces bowtie pasta
- 2 cups beef broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted boiling water according to package directions until al dente (8-10 minutes). Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat, add sliced beef sirloin, and cook for 5-7 minutes until browned. Drain excess grease.
- Add chopped onion and minced garlic to the skillet. Cook for 5 minutes until the onion is translucent.
- Stir in diced tomatoes, spinach, beef broth, and heavy cream. Simmer for 10 minutes to thicken the sauce.
- Add the cooked pasta and Parmesan cheese, tossing to coat. Season with salt and pepper to taste.
Notes
Serve immediately with extra Parmesan cheese or fresh herbs as garnish. Pairs well with garlic bread and a side salad.
